Description

In under 30 minutes these healthy and colorful chicken quinoa bowls come together. They are packed full of flavor and will leave you feeling satisfied and energized.


Ingredients

  • Quinoa, washed and cooked
  • 4 large Chicken Breasts (thinly sliced)
  • Trader Joe’s Chile Lime Seasoning Blend
  • Extra Virgin Olive Oil Non-Stick Cooking Spray
  • 2 medium Red Bell Peppers, diced
  • 1 whole Pineapple, cored, peeled and diced
  • 2 Avocados, pitted and diced
  • 2-3 Jalapeño Peppers, thinly sliced
  • Fresh Cilantro
  • Lime Wedges
  • Fresh Garden Salsa


Instructions

  1. Quinoa: Prepare the quinoa according to package directions. 
  2. Veggies: While the quinoa cooks, prep the veggies and fruit; set aside. 
  3. Chicken: Season both sides of the chicken with the chile lime seasoning. 
  4. Cook: Lightly spray a pan with non-stick cooking spray. On medium-high heat, cook the chicken breasts for 3-4 minutes per side.
  5. Put it together: Assemble the bowls by adding quinoa on the bottom and layering with veggies, fruit and chicken. 
  6. How to serve: Serve with cilantro, lime wedges and salsa. 

Notes

  • Quinoa/Veggies: The cook time of the quinoa is included within the prep time. Also during this time, I prep all my veggies and fruit.
  • Bell Pepper: If you don’t want to eat it fresh, feel free to sauté it in the pan for a couple of minutes until it is crisp-tender.
