Description
In under 30 minutes these healthy and colorful chicken quinoa bowls come together. They are packed full of flavor and will leave you feeling satisfied and energized.

- Quinoa, washed and cooked
- 4 large Chicken Breasts (thinly sliced)
- Trader Joe’s Chile Lime Seasoning Blend
- Extra Virgin Olive Oil Non-Stick Cooking Spray
- 2 medium Red Bell Peppers, diced
- 1 whole Pineapple, cored, peeled and diced
- 2 Avocados, pitted and diced
- 2–3 Jalapeño Peppers, thinly sliced
- Fresh Cilantro
- Lime Wedges
- Fresh Garden Salsa
Instructions
- Quinoa: Prepare the quinoa according to package directions.
- Veggies: While the quinoa cooks, prep the veggies and fruit; set aside.
- Chicken: Season both sides of the chicken with the chile lime seasoning.
- Cook: Lightly spray a pan with non-stick cooking spray. On medium-high heat, cook the chicken breasts for 3-4 minutes per side.
- Put it together: Assemble the bowls by adding quinoa on the bottom and layering with veggies, fruit and chicken.
- How to serve: Serve with cilantro, lime wedges and salsa.
Notes
- Quinoa/Veggies: The cook time of the quinoa is included within the prep time. Also during this time, I prep all my veggies and fruit.
- Bell Pepper: If you don’t want to eat it fresh, feel free to sauté it in the pan for a couple of minutes until it is crisp-tender.
