  • Chicken – You can cook the chicken over the stovetop or grill it. Both options are great.
  • Quinoa – This carbohydrate is rich in protein, fiber, B vitamins and minerals. Quinoa is a great plant-based protein option for vegetarians and vegans.
  • Bell Pepper – For this recipe, you can either eat it raw or sauté it in the pan while the chicken rests. It just depends if you want the bell pepper to have some crunch or be crisp-tender. Either will work great here.
  • Chile Lime Seasoning Blend – This blend tastes great on pretty much anything! And it’s a crucial time saver, especially when you don’t have time to make your own chipotle seasoning or marinade.

Description

In under 30 minutes these healthy and colorful chicken quinoa bowls come together. They are packed full of flavor and will leave you feeling satisfied and energized.


Ingredients

Scale
  • Quinoa, washed and cooked
  • 4 large Chicken Breasts (thinly sliced)
  • Trader Joe’s Chile Lime Seasoning Blend
  • Extra Virgin Olive Oil Non-Stick Cooking Spray
  • 2 medium Red Bell Peppers, diced
  • 1 whole Pineapple, cored, peeled and diced
  • 2 Avocados, pitted and diced
  • 23 Jalapeño Peppers, thinly sliced
  • Fresh Cilantro
  • Lime Wedges
  • Fresh Garden Salsa

Instructions

  1. Quinoa: Prepare the quinoa according to package directions. 
  2. Veggies: While the quinoa cooks, prep the veggies and fruit; set aside. 
  3. Chicken: Season both sides of the chicken with the chile lime seasoning. 
  4. Cook: Lightly spray a pan with non-stick cooking spray. On medium-high heat, cook the chicken breasts for 3-4 minutes per side.
  5. Put it together: Assemble the bowls by adding quinoa on the bottom and layering with veggies, fruit and chicken. 
  6. How to serve: Serve with cilantro, lime wedges and salsa. 

Notes

  • Quinoa/Veggies: The cook time of the quinoa is included within the prep time. Also during this time, I prep all my veggies and fruit.
  • Bell Pepper: If you don’t want to eat it fresh, feel free to sauté it in the pan for a couple of minutes until it is crisp-tender.
