Description

Garlicky hummus, smooth avocado, and creamy eggs make this hearty toast the perfect option for an easy breakfast or filling snack.


Ingredients

Scale
  • 2 slices Bread, toasted
  • Classic Homemade Hummus or store bought Roasted Garlic Hummus
  • 1 Avocado, pitted and sliced
  • 4 Soft Boiled Eggs
  • Trader Joe’s Everything But The Bagel Sesame Seasoning Blend, to taste
  • Fresh Parsley, to taste
  • Optional: Feta Cheese Crumbles, to taste

Instructions

  1. Eggs: Prepare the soft boiled eggs. (I use my Dash Rapid Egg Cooker).
  2. Assemble: On your toasted bread, top with a smear of hummus, avocado slices and two eggs.
  3. Garnish: Add a sprinkle of bagel seasoning, parsley and feta crumbles. Enjoy right away.
