Garlicky hummus, smooth avocado, and creamy eggs make this hearty toast the perfect option for an easy breakfast or filling snack.
- 2 slices Bread, toasted
- Classic Homemade Hummus or store bought Roasted Garlic Hummus
- 1 Avocado, pitted and sliced
- 4 Soft Boiled Eggs
- Trader Joe’s Everything But The Bagel Sesame Seasoning Blend, to taste
- Fresh Parsley, to taste
- Optional: Feta Cheese Crumbles, to taste
- Eggs: Prepare the soft boiled eggs. (I use my Dash Rapid Egg Cooker).
- Assemble: On your toasted bread, top with a smear of hummus, avocado slices and two eggs.
- Garnish: Add a sprinkle of bagel seasoning, parsley and feta crumbles. Enjoy right away.
