One Skillet-Sausage and Veggies with Cauliflower Rice! This one pan meal can be made into a satisfying breakfast or quick weekday lunch.

It comes together with a flavorful and clean chicken sausage, bright vegetables, cauliflower rice and some spices. Top it off with a sprinkle of fresh herbs and you have yourself a yummy meal ready in 30 minutes.

  • It is low carb from the cauliflower rice, but you can substitute quinoa or brown rice if desired

This recipe is gluten-free, dairy-free, and refined sugar-free as well. And, if you can eat eggs, you can serve a fried or scrambled egg on top…and I love it with a dash of hot sauce as well. Tell me, who can’t get behind that?!? 😉

Ingredient Notes For This One Skillet-Sausage And Veggies With Cauliflower Rice:

  • Sausage – The brand I love and use is by Charcutnuvo. I like to use the organic chicken apple sausage for this recipe. It contains clean ingredients, tastes delicious and you can feel good about eating it.
  • Veggies – If you can, try to buy all organic, especially when it comes to the bell peppers, squash and zucchini because they are on the Dirty Dozen list.
  • Cauliflower Rice – I use fresh rice as much as possible, but frozen will work here as well. If you do use fresh, it will require less cook time. So just be sure to not overcook it or it will get mushy.
  • Herbs – This meal can be eaten with or without fresh herbs. The herbs just liven it up a bit more. So, if you want to add herbs, feel free to try fresh cilantro, chives or parsley.

Description

This one pan meal can be made into a satisfying breakfast or quick weekday lunch. It comes together with a flavorful and clean chicken sausage, bright vegetables, cauliflower rice and some spices. Top it off with a sprinkle of fresh herbs and you have yourself a yummy meal ready in 30 minutes.  


Ingredients

  • 2 tbsp Chosen Foods 100% Pure Avocado Oil, divided
  • 1 10 oz pckg Charcutnuvo Organic Chicken Apple Sausage, diced
  • 1 large Red Bell Pepper, diced
  • 1 medium Yellow Squash, diced
  • 1 medium Zucchini, diced
  • 2 Garlic Cloves, minced
  • 1 12 oz bag Organics Fresh Cauliflower Rice
  • Redmond Real Fine Sea Salt, to taste
  • Freshly Ground Black Pepper, to taste
  • 1/2 tsp Onion Powder
  • 1/4 tsp Chili Powder
  • 1/8 tsp Cayenne Pepper
  • Optional: Herbs like Cilantro, Chives, or Parsley
  • Optional: Eggs


Instructions

  1. Sausage and veggies: Prepare the sausage and veggies; set aside.
  2. Cook: To a large sauté pan, add the oil and heat on medium heat. Cook the sausage for 4-5 minutes a side. Remove to a plate.
  3. Veggies: Add the vegetables with a bit of salt and cook for 5 minutes, adding the garlic the last minute.
  4. Rice: Toss in the cauliflower rice, and a bit more salt and cook for about 3-5 mins; stirring occasionally. (Don’t overcook the rice or it will get mushy).
  5. Put it together: Add the sausage and the remaining seasonings and stir to combine.
  6. Optional: Add a sprinkle of fresh herbs on top and enjoy immediately.
  7. Option #2: You can serve a fried or scrambled egg on top, with a dash of hot sauce, for a great breakfast.

Notes

  • If possible, use all organic ingredients.

  1. Great quick and healthy meal. I actually like to make this up and put it in the fridge at the beginning of the week. I’ll heat some up each morning and put a couple of fried eggs over it!
