I don’t know about you, but I haven’t done much this weekend except for lay low and run a ton of errands. It’s only Saturday but it feels like the weekend is almost over. Oh well! Tomorrow is Sunday and for those that are interested it’s the Superbowl, which means yummy food, drinks and sweet treats! I’ll definitely have a little of everything too. 😉
So while you still have time to run to the grocery store, I wanted to share this brand new recipe with you all. These nachos were made in conjunction with my Slow Cooker Chipotle Honey Chicken Tacos. Therefore, the prep and cook time listed below is only for the nachos.
They are SOO dang good and perfect for Superbowl Sunday! YAY!
Chipotle Honey Chicken Nachos

- 1-2 bags Blue Corn or White Corn Tortilla Chips
- 1 Pineapple, diced
- 1 bunch Radishes, diced (optional)
- Queso Fresco, crumbled
- 1 bunch Cilantro
- 4-6 Scallions, diced
- Salsa, store bought or homemade (recipe linked below)
