I made this smoothie for the first time a couple of weeks ago, and it was a complete experiment. It was a throw everything into the blender type situation and see what happens. And boy, was it a pleasant surprise. This smoothie was SO yummy!
You just won’t believe all the veggies that are in it either. IT IS LOADED!!! Spinach, avocado, zucchini and kiwi… And the crazy thing is, you can’t even taste the “veggies”. But what you can make out, is a light sweetness from the kiwi and the super smooth and creamy avocado.
And since being in Texas recently, my husband and I did a ton of eating out. And now that I’m home, I just need something clean and fresh. So you can bet, I’ll be making this green smoothie a lot to make up for it!
- 2 handfuls Spinach
- 1 cup Zucchini, roughly chopped
- 1/2 Avocado, seed removed
- 3 Kiwi, skin removed
- 1 Banana
- 1/2 cup Coconut Water
- Honey (optional)
- Add the veggies, fruit and coconut water to a blender and puree until smooth.
- If the smoothie isn't sweet enough, add a squeeze or two of honey.
- Top off with some ice!
